Meat
- 2 lbs ground beef
- 1 medium onion, chopped
- 2 eggs
- 2 garlic cloves, minced
- 3 Tbsp ketchup
- 3 Tbsp parsley, chopped
- 3/4 cup panko breadcrumbs
- 1/3 cup milk
- 1 1/2 tsp salt (to taste)
- 1 1/2 tsp Italian seasoning, or 1/2 tsp oregano
- 1/4 tsp black pepper
- 1/2 tsp paprika
- 3/4 cup ketchup
- 1 1/2 tsp vinegar (white or cider)
- 2 1/2 Tbsp brown sugar
- 1 tsp garlic powder
- 1/2 tsp onion powder
- 1/4 tsp black pepper
- 1/4 tsp salt or to taste
- Use a 9 x 5 loaf pan and line with foil or parchment. Preheat oven to 375 F
- Combine all meatloaf ingredients in bowl. Add mixture to pan and bake for 40 mins.
- Mix together the sauce ingredients and spread over the top of meatloaf at 40 mins. Bake for an additional 15-20 mins. Remove from oven and let rest for 10-15 mins before slicing and serving.
