Meatloaf with Tangy Sauce

Ingredients

Meat
  • 2 lbs ground beef
  • 1 medium onion, chopped
  • 2 eggs
  • 2 garlic cloves, minced
  • 3 Tbsp ketchup
  • 3 Tbsp parsley, chopped
  • 3/4 cup panko breadcrumbs
  • 1/3 cup milk
  • 1 1/2 tsp salt (to taste)
  • 1 1/2 tsp Italian seasoning, or 1/2 tsp oregano
  • 1/4 tsp black pepper
  • 1/2 tsp paprika
Sauce
  • 3/4 cup ketchup
  • 1 1/2 tsp vinegar (white or cider)
  • 2 1/2 Tbsp brown sugar
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp black pepper
  • 1/4 tsp salt or to taste
Instructions
  • Use a 9 x 5 loaf pan and line with foil or parchment. Preheat oven to 375 F
  • Combine all meatloaf ingredients in bowl. Add mixture to pan and bake for 40 mins.
  • Mix together the sauce ingredients and spread over the top of meatloaf at 40 mins. Bake for an additional 15-20 mins. Remove from oven and let rest for 10-15 mins before slicing and serving.
