- 2 cups long grain rice
- 2 tbsp butter or vegetable oil
- 1 can of chicken broth
- 1/2 onion, diced (optional) or
- 1/2 tsp onion powder (if not using chopped onion)
- 2 tsp minced garlic ( I use jarred garlic from TJs)
- 1/2 tsp salt
- 1 cup tomato salsa ( I use Pace Picante Medium) or 1 can diced tomatoes like Rotel
Instructions
- Add oil or butter to skillet and saute onions (if using). Then add rice and saute until slightly golden.
- Add garlic, onion powder, chicken broth and 1 1/2 cans of water.
- Add tomato salsa.
- Bring liquid to a simmer and cook until rice is done.
