Mexican Restaurant Style Rice

Ingredients
  • 2 cups long grain rice
  • 2 tbsp butter or vegetable oil
  • 1 can of chicken broth 
  • 1/2 onion, diced (optional) or 
  • 1/2 tsp onion powder (if not using chopped onion)
  • 2 tsp minced garlic ( I use jarred garlic from TJs)
  • 1/2 tsp salt
  • 1 cup tomato salsa ( I use Pace Picante Medium) or 1 can diced tomatoes like Rotel

Instructions
  • Add oil or butter to skillet and saute onions (if using). Then add rice and saute until slightly golden.
  • Add garlic, onion powder, chicken broth and 1 1/2 cans of water.
  • Add tomato salsa.
  • Bring liquid to a simmer and cook until rice is done.
