Ingredients (enough marinade for 2 batches):
- 1.5 lbs pork shoulder or pork belly, cut into thick slices for skewer
- 1 small onion, cut into chunks
- 1 small apple or pear, cut into chunks
- 3 cloves garlic
- 1 tsp minced ginger
- 1/4 cup gochujang (Korean red pepper paste)
- 2-3 Tbsp gochugaru (Korean red pepper powder)
- 3 Tbsp brown sugar
- 2 Tbsp mirin
- 1 Tbsp sesame oil
- 1 tsp black pepper
- (optional) 2 Tbsp Korean BBQ sauce
Instructions
Mix all ingredients in a food processor and marinate the meat overnight. Grill on charcoal grill using grill pan. Alternative method is to skewer the meat and arrange over a baking pan with a little water at the bottom to prevent drippings from burning. Roast in 450ºF oven for about 15 minutes or until done.
