Ingredients
- 325 g almond flour
- 1.25 cup sugar
- 2 large eggs
- 3 tsp (1 Tbsp) almond extract
- 1/4 tsp salt
- Sliced or chopped almonds for topping
- Powdered sugar for dusting
- Preheat oven to 350 degrees. Prepare cookie sheets with parchment.
- In a bowl, mix eggs, sugar and almond extract. Add almond flour, salt and mix together with a spoon. You don't need a mixer.
- Scoop 1 tablespoon size of dough, roll into balls, slightly flatten the balls, and add a few sliced or chopped almond pieces on top.
- Bake 15-17 minutes, until edges are golden brown. The inside will be still be soft and chewy in texture.
- Dust with some powdered sugar. Store in airtight container, or freeze in airtight container for up to 6 months.
