This is so much better than those mayonnaise-y cole slaws from the deli, and so easy to make. First time I made it, I couldn't stop eating it, but who cares? It's raw vegetables, the healthiest type of food to eat.
Ingredients:
Salad
1 bag pre-shredded cole slaw mix (usually includes cabbage and carrots)
8 green onions, trimmed and chopped
1 cup shredded red cabbage, optional, for additional color
Dressing
1 cup vegetable oil or bland-flavored olive oil
1/4 cup rice vinegar
1/8 cup sugar
1 tsp sesame oil
up to 1/4 tsp salt, to taste
black pepper, a few shakes
Instructions:
Whisk the oil, vinegar, sugar and sesame oil for the dressing. Add the salt in increments, whisking and taste testing between additions. When there's enough salt, the dressing will go from bland to sublime - the taste of the sesame oil richness will really come out and you should be able to tell the difference. Add black pepper to taste.
Spoon dressing over cole slaw mix in a large bowl. Toss to coat with dressing, and serve. Some people like to sprinkle almond slivers, uncooked broken up ramen noodles or crunchy chow mein noodles.
