Cyndy's Corn Pudding

Recipe contributed by Cyndy Ellis (my sister). She says, "I make this just about every Thanksgiving.  It's very easy.  Not very low-fat, though."

Ingredients:
  • 1 lb (2 sticks) butter
  • 2 cans creamed corn
  • 2 cans drained regular corn
  • 2 boxes Jiffy Corn Muffin mix
  • 16 oz sour cream
Instructions:
  • Mix all ingredients. Bake in casserole dish (9x13) at 375°F for at least 1 hr.
Low Fat Version:
  • 1 Tbsp butter
  • 3 egg whites
  • 8oz  fat free cream cheese
  • 16oz fat free sour cream
  • 2 cans creamed corn
  • 2 cans drained regular corn
  • 2 boxes Jiffy Corn Muffin mix
