For making chicken patties that can fit into sandwiches or use in salads. No breading or frying.
Ingredients:
- about 1.5 lbs of chicken breast (usually the Costco packages are about this size)
- 1/2 tsp salt (or to taste)
- 1/2 tsp black pepper
- 1/2 tsp paprika
- 1/2 Tbsp onion powder
- 1/2 Tbsp garlic powder or granulated garlic
- 1/2 chopped cooked onion, or 1 Tbsp dried onion flakes
- 1 egg
Instructions:
- Cut the chicken up into smaller pieces. Put all ingredients into food processor and chop/blend until mixed.
- Place foil on a baking sheet and spray or drizzle with olive oil. Add the mixture to the baking sheet and spread it out with a spatula into a 8 by 12 inch rectangle shape.
- Bake at 350 for 15 minutes, then remove and let cool.
- Cut the rectangle into 4 by 4 squares and store in a ziploc bag for up to 4 days in the refrigerator (or freeze).
